The Champagne of Oysters

Gillardeau oysters are of fleshy and delicate texture and a balanced flavor, they are difficult to match, and the manual labor involved can be likened to the production of Champagne bottles. UMAMI OYSTERS

If oysters grew on trees, we’d be planting those things 24/7. Unfortunately, they grow in the ocean—where it’s cold and dark and full of squid so large we call them “giant squid.” Maybe that’s why oysters are so expensive. The good news is, we always have the freshest oysters available.

FINE DE CLAIRE

Popularized by the French bon vivant in the 17th century, The Fine de Claire is a well known Frewoyster that has undergone its last ‘affinage’ in the ‘claires’. These claires, which are connected to the open sea, are shallow closable ponds in the past used mainly for the production of salt.

Thanks to the affinage in the claires, these oysters have a stronger, slightly sweeter taste. These Fines de Claires lie in the ponds for 1-3 months at a density of 20 oysters per square meter. Your best oyster spot in Dubai is out of there waiting for you.

OSTRAS REGAL

Although grown by La Famille Boutrais of French oyster fame, the Regal Oyster is actually (you didn’t hear it from us…) Irish! After being seeded and grown in Clew Bay for one year, then moved to Bannow Cove to complete their transformation for another two years, it is safe to say that these big boys are always on the move.

It’s survival of the fittest for these rock stars as only the heaviest, roundest and curviest oysters are used. After feasting on the rich springs that feed the bay, they are about four years old when ready to consume, filled with dense and sweet mineral meats.
